Bring home the taste of New Orleans with this Creole favorite! Add chicken, smoked sausage and/or shrimp for a delightful, hearty meal.
Ingredients
1 packet Just In Time Gourmet® Creole Gumbo Mix
2 tablespoons vegetable oil
1 pound chicken breasts, cut into 1-inch cubes
1 pound smoked sausage, cut into 1⁄2-inch slices
4 cups water
1 (15-ounce) can diced tomatoes, undrained
1 (8-ounce) bag frozen cut okra
1 cup prepared rice, optional
Hot pepper sauce, optional
Directions
• In a 4-quart pot or Dutch oven add oil, chicken and sausage; cook on medium heat for 5-7 minutes or until juices run clear.
• Stir in gumbo mix and water. Bring to a slow boil; reduce heat and continue cooking for 5-10 minutes, stirring occasionally.
• Add diced tomatoes and okra; continue cooking for 5-10 minutes until heated through. Do not overcook okra or it will become gummy. Serve over rice with a dash of hot pepper sauce, if desired.
