Lemon Muffin Mix
Bursting with flavor... Lemon tang engulfed in a fluffy, sweet muffin makes these the perfect anytime treat.
1 packet Just In Time Gourmet® Lemon Muffin Mix
1/3 cup butter or margarine, melted
1/2 cup milk
• Preheat oven to 350 degrees. Spray muffin tins with flour-based cooking spray; set aside.
• In large bowl, combine mix with butter, eggs, and milk and stir until well blended.
• Fill regular muffin tins 2/3 full or fill mini-muffins half full with batter.
• Bake regular muffins for 25 minutes or mini-muffins for 20 minutes.
Yields: 12 regular muffins or 30 mini-muffins
Serving Suggestions: add 1 cup blueberries or raspberries, fresh, canned (drained), or frozen (thawed).
